I love the hot silky egg with gooseliver nestled in it, the crunch of the delish rice roll and the perky orange salad with smoked duck.

We savour the yummy goodness of the Special Claypot Soup of Twin Fish Maw Pork Cartilage in Fish Bone Broth is so comforting. The hot broth is steeped from deep sea fish bones and pork cartilage, and the claypot of it is heated up in front of us. The sticky feel comes also from two kinds of fish maw – the white and smooth far gow and the fried yu piu.

Braised Olive Pork Lion Head and Wintermelon with Crab Roe

Braised Olive Pork “Lion Head” & Winter Melon with Crab Roe is one of three main courses in this meal. A huge meatball like a see chee tow (lion head) sits on a slice of wintermelon. I get the layers of flavour in the hand chopped olive pork, with water chestnut in it, and rich, delicious sauce, with crab roe melted in it.

Golden Fried Wild Icelandic Cod with Signature Fiery Garlic Black Bean Sauce

Golden Fried Wild Icelandic Cod with Signature Fiery Garlic Black Bean Sauce is luxury on your palate. The cod fillet, crispy on the outside, and with a steamed fish texture inside, has been fry bathed slowly in oil. Garlic gives flavour to the oil which hugs the fish, completed with the fiery garlic black bean sauce.

Japanese Dried Scallop Congee with Bite Size Kanto Sea Cucumber & Crunchy Spring Roll has the black spiky Japanese sea cucumber in the congee (the more spikes, the more expensive it is!). The congee is flavourful with the dried scallops; there’s a crunch in the spring roll, and a springy mouthfeel with the sea cucumber.

All are irresistible bites, beginning with the crispy soft shell crab in a lightly spicy and sweet sauce and the Hokkaido scallop melting into the beancurd in a perfect, citrusy sauce.

The E.I Double Boiled Soup bowls me over with Fish Maw with Murrill Mushroom, Dried Conch & Black Chicken. The sweetness and goodness of black chicken are distilled into the soup together with the murrill mushroom and dried conch. Then there are the smooth slices of fish maw to make you go “wow”.

We relish the different textures of beef shin, brisket and neck in the Braised Trio Japanese A5 Wagyu Beef with Fresh Beef Tendon. The luscious sauce is all embracing, infusing the meat and the melty tendon, with carrot and potato mopping it up. It was so good.

The sauce is so enticing and delectable, you would leave no trace of it on the prawn shell or on the plate. Salted egg yolks has been slowly melted into the yummiest sauce. The celery on the plate to cut the guilt but then even this is so juicy and nice.
