Marcus Low is the Mad Hatter of desserts. You never know what he’ll pull out of his hat next.. We were at his Mad Cake Picnic recently, where we had a taste of his new MadHatter retail cake collection, entremets, plated desserts and pastries.

Plated desserts that used to bowl over fans at his MadHatter Desserts outlet in Uptown, Damansara, had the same effect at Psychotic Operator where he laid out his “Mad Cake Picnic”.

What’s inside
Crack open the all-chocolate Pineapple and Rum Cake, and it’s mascarpone mousse and spiced pineapple compote on a gula melaka Raksasa rum-soaked baba.

“I love kei chai pang” says the dessert wizard and wow, does it work in the hazelnutty Chocolate and Rye Cake! The biscuit baked with red fermented beancurd has a salty edge and inimitable aroma. The peanut ice cream is on another level – with an infusion of toasty peanuts and peanut skin.

So real — the Teapot Cakes
The Mad Hatter Teapot Cake has an oolong tea base, with its slight bitter edge offset by passionfruit mousse.

There’s Porcelain Illusion – the classic Chinese porcelain rice bowl made of white chocolate and a cockerel hand-painted on it. It’s filled with coconut mousseline and peanut genoise, then topped with tangyuan.

Plated desserts aside, the cakes on the table are the drawcard too — the Queen’s Victoria, Through the Black Forest, Raspberry Rose Lychee Cake, the Marry Me Cake, Chocolate and Calamansi Cake. Then the Curious Orchard, Palmiers, an apple and kedondong tart, Sambal Tempoyak Bun, Black Sesame Bagels, and other breads.

The Mad Cake Picnic is Marcus’ newly curated pop-up menu. It showcases his desserts evolving through the years when he was first runner-up in Masterchef Asia, then started Madhatter Desserts in Uptown, PJ. He has relocated to Kepong, where he creates bespoke desserts, some of which are on a certain restaurant menu.
